Indian Vegetable Dishes (Sabzi): Simple, Hearty & Delicious

A large part of Indian cuisine is vegetarian and includes a wide variety of vegetable dishes. Eating vegetables with every meal takes on a different meaning in Indian cuisine, as it provides essential nutrients while offering a diverse range of flavorful vegetable dishes. Indian sabzis are a great source of vitamins, antioxidants, and other essential nutrients. With an incredible variety of produce, Indian cuisine offers endless ways to enjoy vegetables.

Sabzi, also known as sabji, refers to a wide variety of Indian vegetable dishes that are served as main dishes. These dishes are usually enjoyed with roti, paratha, or rice.

Sabzi dishes can range from dry stir-fries (soohki) to gravy dishes. Dry sabzi has very little liquid and is cooked mainly with spices. Gravy sabzi are saucy and usually contain tomatoes, onions or yogurt. Every day, Indian spices found in sabzi dishes include turmeric, cumin, coriander, chili powder, and garam masala. 

Vegetables such as potatoes, cauliflower, okra,  cabbage, spinach, eggplant, peas, and carrots are commonly used to make sabzi. One of the great things about Indian sabzis is that they can be prepared in under 30 minutes, and even faster when using an Instant Pot or pressure cooker.

Indian sabzis offer incredible variety and versatility. For example, even a simple ingredient like potatoes can be used to create a wide range of dishes. Below are some of our favorite sabzi recipes: 

1. Bhindi Masala

Bhindi is also known as lady-fingers.  Bhindi masala is a North Indian dish made with tender okra cooked in a flavorful onion and tomato masala. Bhindi, also known as okra, is a sticky vegetable, and the key to preparing it properly is to sauté the okra correctly before adding the masala, which helps maintain its texture and enhances its flavour.

2. Gajar ki Sabzi

Gajar is usually known for Gajar ka halwa (Indian carrot pudding), which is a popular Indian dessert; however, gajar ki sabzi is an equally delicious savoury dish that is simple to prepare. The carrots are first chopped and lightly boiled. In a pan, chopped green onions are sautéed, then the boiled carrots are added along with everyday Indian spices such as salt, pepper, and chili powder. 

The dish is finished with kasuri methi and is often served with plain yogurt on top.

3. Aloo Palak

Spinach, also known as palak, is a popular leafy green vegetable. When combined with a starchy vegetable like potatoes (aloo), it creates a dish that is both scrumptious and well-balanced. 

In a pan, cook the onions until translucent, then add hing, cumin seeds, whole dried red chilies, and chopped garlic cloves. Sauté for a few minutes, then add salt, turmeric powder, coriander powder, and red chili powder, and cook for another 3–4 minutes. Add the potatoes and cook on low heat for about 10 minutes.

Once the potatoes have softened, add the spinach and let everything cook together for a few more minutes. Finish with kasuri methi and serve with your favorite Indian flatbread.

4. Palak Paneer

Palak Paneer is a rich and flavorful dish that may not be an everyday dish, but it truly stands out on special occasions. Begin by blanching the spinach. Add cilantro, green chilies, water and blend. Set aside. In a heated oil pan,  sauté onions,  ginger, garlic, tomato puree and various spices until fragrant. Add the spinach puree to the masala and mix well.

In another pan, lightly fry the paneer pieces on both sides. Add the cream to the spinach mixture and stir gently to combine. Gently add the paneer cubes to the spinach curry and simmer for 2–3 minutes so the paneer warms through and absorbs the flavors. Palak Paneer is one of the most popular paneer dishes, loved for its creamy texture and rich velvety flavor.

5. Baingan Ka Bharta

Baingan Ka Bharta is an exquisite and unique dish. The main key to the dish is roasting the eggplant until the skin is charred and the inside becomes soft.  Once the eggplant is fire-roasted and mashed, it is then cooked with a flavorful masala made with onions, tomatoes, garlic and warm spices.  

Baingan Ka Bharta is known for its fiery and indulgent taste. 

6. Aloo Gobi

Aloo Gobi is a hearty and comforting dish that can be whipped up fairly quickly. It begins with a tomato and onion masala made with everyday Indian spices. Cauliflower is added and cooked until it starts to soften, followed by chopped potatoes. The vegetables are then cooked together until tender. Aloo gobi is best eaten with fresh roti.
