Bengali Mishti Doi Recipe - Sweet Yogurt Pudding - Homemade Sweet Curd Dessert

Ingredients

  • Hung Curd - 1 cup 
  • Milk - 3 cups 
  • Sugar - 1/2 cup + 1/2 cup (divided)

Instructions

How to Make Mishti Doi:

1) Start by hanging your curd so that all the water is removed, about 30-mins to 1 hour.

2) In a saucepan, start by adding 1/2 cup of sugar to a dry pan. Let the sugar caramelize and become golden brown - about 5-6 minutes. 

PRO TIP: Stir constantly and watch closely. It goes from beautiful to burnt very quickly!

3) Once the color of the sugar has changed, add in 1 cup of milk slowly and mix everything well until incorporated. 

4) Now add the remaining 2 cups of milk and mix well. 

5) Set the milk mixture aside to cool until the milk is lukewarm (not too hot or too cold) 

6) Place 1 cup of your hung curd and in a bowl. 

7) Mix the hung curd well until it becomes a smooth mixture. 

8) Next, very slowly add the milk mixture to the curd while mixing constantly to incorporate everything well so that you have a smooth mixture.

9) Ladle the mixture into small clay pots and cover them individually with aluminum foil. 

10) Place them in a warm area and let them rest overnight.

11) The next day, place the pots on a wire rack inside of a pan and cover with a lid.

12) Place the heat on med/low and bake for 10-15 minutes. 

13) Remove from heat and let cool in the refrigerator for 5+ hours.
