Cheesy Vegetarian Nachos

Ingredients
For 6 servings
Vegetable Broth - 2 Cups
Lentils (Rinsed) - 1 Cup
Chili Powder - 2 Tsp
Cumin - 2 Tsp
Salt - 1 Tsp
Pepper - ½ Tsp
Garlic Powder - 1 Tsp
Dried Oregano - 1 Tsp
Black Beans (Drained and Rinsed) - 15oz / 1 Can
Corn (Drained and Rinsed) - 15oz / 1 Can
Shredded Mexican Cheese Blend - 1 ½ Cups
Tortilla Chips - 1 LB
Red Onion (Chopped) - ½ Cup
Shredded Lettuce - 1 Cup
Jalapeño (Sliced) - 2 Qty.
Fresh Cilantro (Chopped) - ⅓ Cup we missed this in the shoot
Tomato (Diced) - 1 Cup
Guacamole (Optional)

Instructions
1) In a large pot, turn on medium-high heat and pour in lentils, vegetable broth, salt, pepper, cumin, oregano, garlic powder, and chili powder.
2) Bring the whole mixture to a boil and once it’s boiling, reduce the heat to a simmer. Cover with a lid and cook for 35 minutes.
3) Once cooked, add the corn and black beans.
4) Preheat the oven to 350˚F or 175˚C
5) Take a baking sheet and place a layer of tortilla chips and layer it over with half of the lentil mixture and add in half of the cheese.
6) Place another layer of tortilla chips, add the remaining lentil mixture and the remaining cheese.
7) Place it in the oven and bake it for 8 to 10 minutes or until all the cheese has melted.
8) Top with lettuce, tomatoes, jalapenos, red onions and guacamole.
9) Serve it up!
