Instructions

1) In a large mixing bowl, combine boiled and mashed potatoes, shredded white cheese, chopped jalapeños, chopped corn, oregano, red chili flakes, and salt. Mix thoroughly to ensure all ingredients and spices are evenly distributed.

2) In a separate bowl, whisk together the corn flour, all-purpose flour, and water until a smooth, lump-free batter forms. The consistency should be thick enough to coat the rolls evenly.

3) Using a food processor or a rolling pin, crush the papad into fine pieces and transfer them to a plate. Set aside for coating.

4) Take a portion of the potato mixture and shape it into a long cylindrical roll. Repeat with the remaining mixture.

5) Dip each roll into the prepared batter, ensuring it is fully coated. Then, roll it in the crushed papad to create a crispy outer layer.

6) Heat oil in a pan over medium heat. Once hot, fry the rolls until golden brown, turning occasionally to ensure even cooking on all sides, about 3-4 minutes in total.

7) Remove the fried rolls from the oil and place them on paper towels to absorb any excess oil.

8) Enjoy the rolls while hot with your favorite chutneys or dipping sauces!
