Band Gobhi ki Sabzi

Ingredients
½ cup oil
1/2 tsp mustard seeds
2 green chilies
1 tsp cumin seeds
5-6 curry leaves
1 onion medium size
1 tbsp ginger garlic paste
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp red crush pepper
Salt to taste
2 tomatoes (we did 1 large puree)
1 bell pepper (½ red & ½ green)
1 whole cabbage (sliced very thinly)
Chopped cilantro for garnish
A home-cooked dry vegan curry with cabbage and spices - who says no to such deliciousness? We present, Band Gobhi/Patta Gobhi Sabzi which is light on fat and can be enjoyed with chapatis, phulkas,, or rice.
Instructions
1) Heat the oil in a pan on a medium flame. Add the mustard seeds, green chilies, cumin seeds, curry leaves and cook for a few minutes.
2) Add onions and sauté.
3) Add the ginger and garlic paste and stir.
4) Add turmeric powder, coriander powder, red crush peppers and salt to taste. Mix well.
5) Add the tomatoes and let it cook for a few minutes.
6) Add bell pepper, cabbage and stir well.
7) On medium low heat, cook it for 10 to 12 minutes.Stir well.
8) Add bell pepper and stir well. Cook for 3 to 5 minutes on low heat.
9) Take it off the stove.
10) Garnish with freshly chopped cilantro.
