- Cherry Tomatoes - 1 cup
- Onion - 1 medium (chopped)
- Cilantro - 2 Tbsp (chopped)
- Fresh Mint - 1-2 stems (chopped)
- Garlic - 3-4 Cloves (chopped)
- Balsamic Vinegar - 1 Tbsp
- Extra Virgin Olive Oil - 2 Tbsp + 2 Tbsp
- Lemon Juice - 1 tsp
- Black Pepper Powder - 1/2 tsp
- Salt - 1 tsp
Cheese Spread Ingredients:
- Paneer - 1 cup
- Fresh Cream - 6 Tbsp
- Red Chili Flakes - 2 tsp
- Salt - 1 tsp
- Black Pepper Powder - 1 tsp

Instructions
How to Make Indian Style Bruschetta:
1) In a bowl add 1 cup chopped cherry tomatoes, 1 medium chopped onion, 2 Tbsp finely chopped cilantro and 1-2 stems of chopped fresh mint.
2) Add 3 cloves of crushed/finely chopped garlic.
3) Add 1 tsp salt, 1/2 tsp black pepper, 1 Tbsp balsamic vinegar, 2 Tbsp olive oil, 1 tsp lemon juice. Mix and set aside.
4) In a blender add 1 cup paneer and 6 Tbsp of fresh cream. Blend till the smooth paste.
5) Remove from the blender and add to a bowl.
6) To the blended paneer mixture add 2 tsp chili flakes, 1 tsp salt and 1 tsp black pepper and mix everything well.
7) To assemble cut french loaf bread into 1/4 inch thick diagonally pieces.
8) Heat pan on a medium heat with 2 Tbsp of olive oil.
9) Place the bread slices in a pan and let it toast till you get golden marks. Flip and do the same.
10) Remove all the slices from the pan and rub a cut piece of garlic on the bread.
11) Spread some of the paneer mixture on each piece of bread.
12) Add some of the tomato mixture on top of the cheese spread.
13) Feel free to garnish with some chopped cilantro and enjoy!
