Bhindi Masala Recipe - Easy Indian Okra Sabzi with Onion & Tomato - Home-Style Vegetarian Dish

Ingredients
- Okra (Bhindi) - 1 lbs
- Onion - 2 medium (sliced)
- Tomato - 2 medium (sliced)
- Red Chili Powder - 1 tsp
- Coriander Powder - 1 1/2 tsp
- Turmeric Powder - 1/4 tsp
- Cumin Powder - 1/2 tsp
- Salt - 1 1/2 tsp
- Ginger/Garlic Paste - 1 tsp
- Oil - 1/2 cup

Instructions
1) Begin by rinsing 1 pound of okra (bhindi) well under running water. Chop off both ends. Chop the bhindi into 3/4 inch pieces.
2) In a pot add 1/4 cup oil and add chopped bhindi. Saute them well for 5-7 mins on a medium heat. Stirring often to fry them uniformly. After the sticky substance is gone and oil separates. Transfer them to a bowl.
3) Add remaining oil to the same pot and 2 medium sliced onions, saute onions until soft and translucent.
4) Add 1 tsp ginger/garlic paste and saute until the ginger/garlic is fragrant, for about 1 min.
5) Add 2 medium sliced tomatoes and 1 1/2 tsp salt and saute well until the tomatoes are completely soft
6) Add 1 tsp red chili powder, 1 1/2 tsp coriander powder, 1/2 tsp cumin powder and 1/4 tsp turmeric powder. Saute all the spices well. then cover and cook for 5-6 min.
7) Add fried bhindi back to the masala mixture, mix well. Cover and cook a few more minutes on a low to medium heat until the bhindi turns tender.
8) Enjoy Bhindi masala with plain rice or roti!
