Ingredients

Sandwich Stuffing Ingredients:

  • Potato - 1 large (cooked & mashed)
  • Onion - 1 medium (chopped)
  • Green Chilies - 1-2 qty. (chopped)
  • Coriander Leaves – 1 Tbsp (chopped)
  • Red Chili Powder - 1 tsp
  • Garam Masala - 1/2 tsp
  • Salt - to taste

Pakora Batter Ingredients:

  • Besan (Gram Flour) - 1 cup
  • Cumin Seeds - 1 tsp
  • Carom Seeds - 1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Turmeric - 2 pinch
  • Garam Masala - 1/2 tsp
  • Hing - 1 pinch
  • Baking Soda – 1 pinch (optional)
  • Water - as needed
  • Salt - to taste

Additional Ingredients:

  • Bread - 6-8 slices
  • Oil - for frying
  • SWAD Mint Chutney

Instructions

How to Make Bread Pakora Stuffing:

1) In a frying pan over medium high heat, add a couple tablespoons of oil.

2) Add 1 tsp cumin seeds and 1/2 tsp carom seeds into the oil and wait until they splutter.

3) Add 1 medium chopped onion and 1-2 chopped green chilies. Saute until the onion turns translucent.

4) Next, add 1 tsp red chili powder, 1/2 tsp garam masala, 2 pinches of turmeric, and salt to taste. Mix well before adding the potato.

5) Add 1 large cooked and mashed potato and mix until the masala is well distributed.

6) Finally, add 1 Tbsp chopped coriander leaves and mix together.

7) Check the seasonings and adjust accordingly. Remove from heat and set aside to cool.

How to Make Bread Pakora Batter:

8) In a wide mixing bowl, sift 1 cup of besan (gram flour).

9) Add 1 tsp cumin seeds, 1/2 tsp carom seeds, 1/2 tsp chili powder,2 pinches of turmeric powder, 1/2 tsp garam masala, a pinch of hing and a pinch of baking powder (optional).

10) Now add the required amount of water and make a medium thick batter.

PRO TIP: The batter should not be too thick or too thin. If it is too thick, then add more water!

How to Make Bread Pakoras:

11) Slice the crusts off of 6-8 slices of bread.

12) Spread SWAD Green Chutney evenly on one slice.

13) Spread 1 - 2 tbsp of the potato mixture evenly on top of the chutney.

14) Cover it up with another slice of bread, press it slightly, and cut it diagonally into a triangle.

15) In a large frying pan, heat enough oil over medium heat to fry the sandwiches.

16) Holding each sandwich together gently, dip into the pakora batter to coat evenly, and place into the hot oil.

PRO TIP: Do not soak your sandwiches in the batter - dip and fry immediately to avoid breaking!

17) Fry on each side until it is crispy and golden brown (2-3 minutes each side).

18) Place them on kitchen paper towels so that excess oil is absorbed.

19) Served best with mint chutney, hot honey or ketchup!
