Aloo Kulcha Recipe - Soft Vegetarian Indian Bread Stuffed with Spiced Potatoes

Ingredients

Kulcha Dough Ingredients:

  • All-purpose flour (Maida) - 3 cups
  • Yogurt - 1/2 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Oil/Ghee - 2 tbs
  • Sugar - 2 tbs
  • Salt - 1 tsp
  • Warm water - 1/2 cup
  • Warm milk - 1/4 cup

Filling Ingredients: 

  • Boiled potatoes - 3-4 (Mashed)
  • Cumin seeds - 1 tsp (dry roasted and crushed)
  • Coriander seed - 1 tsp (dry roasted and crushed)
  • Ginger - 1 inch (chopped)
  • Fresh Cilantro - 3 tbs (chopped)
  • Green chilies - 3-4 (chopped)
  • Onions - 1/2 cup (chopped)
  • Pomegranate seed powder - 1 tsp
  • Black salt - 1/2 tsp
  • Dry Mango powder - 1/2 tsp
  • Carom seeds - 1 tsp
  • Red chili powder - 1 1/2 tsp
  • Salt - 1 tsp

Aloo Kulcha is a comforting vegetarian Indian bread made with a soft, homemade dough and a flavorful mashed potato filling. The dough is prepared with maida, yogurt, warm milk, and a little oil or ghee, then rested until it becomes soft and easy to roll. Inside, the potato filling is mixed with roasted cumin, coriander seeds, ginger, green chilies, onions, cilantro, and classic spices for a bold, savory taste.

Each kulcha is stuffed, rolled, and cooked on a hot tawa until golden spots appear, then brushed with butter or ghee for a rich finish. Instructions

Instructions to Make Dough:

1) In a big mixing bowl or vessel, add 3 cups all-purpose flour (maida), 1/4 tsp baking soda, 1 tsp baking powder, 1 tsp salt, and 2 tbsp sugar. Combine all the dry ingredients.

2) Add 1/2 cup yogurt, 2 tbsp oil or ghee, 1/4 cup warm milk, and 1/2 cup warm water. Rub and mix everything together until the mixture becomes crumbly.

3) Stretch and knead the dough for 10–15 minutes, until you get a soft, smooth dough.

PRO TIP: Take your time to knead the dough until it comes together and becomes soft and stretchy.

4) Lightly grease the dough with some oil and cover it with a damp kitchen towel.

5) Let it rest for 2–3 hours in a warm place.

PRO TIP: For extra-soft kulchas, let it rest for 4–6 hours.

Instructions to Make Potato Filling:

6) In a bowl, add 3–4 boiled mashed potatoes, 1 tsp carom seeds, 3 tbsp chopped fresh cilantro, 3–4 chopped green chilies, 1 inch chopped ginger, 1/2 cup chopped onions, 1 tsp dry roasted and crushed cumin seeds, 1 tsp dry roasted and crushed coriander seeds, 1 tsp pomegranate seed powder, 1/2 tsp black salt, 1/2 tsp dry mango powder, 1 1/2 tsp red chili powder, and 1 tsp salt. Combine well and keep it aside.

Instructions on Stuffing and Cooking Kulcha:

7) Divide the dough into 7–8 equal-sized balls. Brush with oil and cover with a damp towel. Rest for 10–15 minutes.

8) Flatten each ball and add the potato filling.

9) In a bowl, take 1 1/2 cups water and 1 tsp salt. Mix and set aside.

10) Seal and gently roll into an oval or round shape. Sprinkle some red chili powder, nigella seeds (kalonji seeds), and fresh cilantro.

11) Heat a tawa over medium-high heat. Sprinkle some salt water and let the water dry.

12) Lightly wet the bottom side of the kulcha and place the wet side down on the hot tawa.

13) Cook until bubbles appear.

14) Flip the tawa upside down over an open flame until golden spots appear.

PRO TIP: You can also use an oven broiler to finish cooking the kulcha.

15) Transfer to a plate. Brush it with butter or ghee.

16) Serve hot with chole, yogurt, pickles, or chutney.
