Instructions

1) In a large pot, bring 4–5 cups of water to a boil.

2) Add the noodles and 1 tsp salt. Boil for 2 minutes.

3) Drain the noodles and rinse them under cold water to stop the cooking process. Toss with 1 tsp oil and the corn starch.

4) Heat oil in a deep frying pan over medium heat. Deep fry the boiled noodles in batches until they are light golden brown and crispy.

5) Remove the noodles from the oil and drain on a plate lined with paper towels.

PRO TIP: For a healthier option, bake the noodles in the oven or cook them in an air fryer instead of deep frying.

6) Add the peanuts to the hot oil and fry for 2 minutes. Remove and set aside.

7) Heat 2 tbsp oil in a wok over medium-high heat. Add the chopped ginger and garlic and sauté for 1 minute. Add the white parts of the green onions and cook for 2 minutes. Add the shredded cabbage, carrots, and bell peppers. Toss everything together and cook for 2–3 minutes.

8) Add the Schezwan sauce, red chili sauce, soy sauce, salt, and white pepper powder. Mix well.

9) Break the crispy noodles into a large serving bowl. Add the cooked vegetables, fried peanuts, and sesame oil. Toss everything together until well combined.

10) Transfer to a serving bowl and garnish with some extra crunchy noodles, the green parts of the green onions, and additional peanuts. Enjoy!
