Ingredients

  • Tapioca pearls / sago pearls, micro or small size - 1/2 cup
  • Ripe mangoes - 3 to 4, cut into small bite-sized pieces
  • Sweetened condensed milk - 1/2 cup
  • Evaporated milk - 3/4 cup
  • Fresh cream - 1 pack
  • Regular milk - 2 cups
  • Red and yellow jelly - 3/4 cup each, optional
  • Mango-flavored popping boba pearls - 1/2 cup, optional topping
  • Water - 3 to 4 cups, for boiling tapioca pearls

Mango Sago is a creamy, chilled dessert made with soft tapioca pearls, ripe mango chunks, mango puree, condensed milk, evaporated milk, fresh cream, and regular milk. Every spoonful has a refreshing mix of sweet mango flavor, creamy milk, and chewy sago pearls, making it a perfect dessert for warm days, family gatherings, or mango season treats.

This mango tapioca recipe can also be made extra colorful with red and yellow jelly cubes and mango-flavored popping boba for a fun texture. Serve it cold in tall glasses or dessert cups for a bright, refreshing mango dessert that is easy to prepare and beautiful to share.

Instructions

1) Boil 3 to 4 cups of water in a large pot. Once the water reaches a rolling boil, slowly add the sago pearls while stirring continuously to prevent clumping.

2) Reduce the heat to medium and cook uncovered for 10 to 15 minutes, stirring occasionally.

PRO TIP: Small pearls cook faster, while larger pearls may need a longer cooking time.

PRO TIP: Sago is done when the pearls turn translucent with no white center.

3) Pro Tip: If white spots remain, turn off the heat, cover the pot, and let the pearls sit for 10 minutes to finish cooking.

4) Drain the cooked sago pearls and rinse them under cold running water to stop the cooking process and remove excess starch.

5) In a blender, add 1 cup of mango chunks and 1/4 cup of milk. Blend until smooth, then set the mango puree aside.

6) In a large bowl, add the remaining mango chunks, cooked sago pearls, mango puree, jelly cubes, condensed milk, evaporated milk, fresh cream, regular milk, and popping boba if using. Mix everything well.

PRO TIP: You can use coconut milk or another non-dairy milk alternative for this recipe.

7) Refrigerate for 3 to 4 hours until chilled.

8) Pro Tip: Add crushed ice if you want to serve immediately.

9) Serve cold in tall glasses or dessert cups.
