  • All-Purpose Flour - 1 1/2 cups
  • Yogurt - 1 cup
  • Sugar - 1 cup
  • Oil or Butter - 1/2 cup
  • Baking Powder - 1 1/4 tsp
  • Baking Soda - 1/2 tsp
  • Vanilla Essence - 1 tsp
  • Tutti Frutti - 1/2 cup
  • Salt - 1/4 tsp

Instructions

1) Pre-heat oven to 350°F or 180°C.

2) Grease loaf pan with melted butter or oil. Line with parchment paper.

3) In a bowl add 1/2 cup tutti frutti and 1 tsp flour. Mix until the tutti frutti pieces are coated with the flour.

PRO TIP: Make sure the tutti frutti is coated with flour - this is to avoid tutti frutti from sinking to the bottom.

4) In a large bowl add 1 cup yogurt, 1 cup sugar, 1/2 tsp baking soda and 1 1/4 tsp baking powder. Whisk all ingredients and set aside for 5 min.

5) In another bowl, sift 1 cup all-purpose flour.

6) To the yogurt mixture add 1 tsp vanilla essence, 1/2 cup oil and 1/4 tsp salt. Mix slightly.

7) Add flour in 2 batches. Mix well with the spatula.

8) Add flour covered tutti frutti. Fold in gently.

9) Pour the batter into the prepared loaf pan. Sprinkle 1 tsp tutti frutti for topping.

10) Bake in a preheated oven for 45-50 min or until a tooth pick inserted in the center comes out clean.

11) Let the cake rest in the pan for 5 min. Scrap the sides then invert to de-mold.

12) Cool down the cake on a wire rack for at least 30 min.

13) After the cake is completely cooled down, then slice the cake.

14) Delicious tutti frutti cake is ready to enjoy with a cup of tea.
