Eid Special Sheer Khurma - Rich & Creamy Seviyan Kheer - Vermicelli Milk Dessert with Dates & Nuts

Ingredients

  • Milk (full fat) - 4 cups
  • Thin Vermicelli (seviyan) - 1 cup
  • Condensed Milk - 1/2 cup
  • Sugar - 1/2 cup
  • Dates - 5-6 (halves)
  • Almonds - 10-15 (sliced)
  • Pistachio - 15-20 (sliced)
  • Chironji seeds - 2 Tbs (optional)
  • Golden Raisins - 1/4 cup
  • Cinnamon stick - 1 inch
  • Green Cardamom - 4-5
  • Cloves - 4-5
  • Unsalted Butter - 8 (Tbs)

Sheer Khorma is a traditional Eid dessert made with roasted vermicelli (seviyan), full-fat milk, dates, nuts, and fragrant whole spices. This rich and creamy milk pudding is especially prepared during Eid-ul-Fitr and is often served to family and guests as a symbol of celebration and togetherness.

The name “Sheer Khurma” literally means “milk with dates,” and this comforting Indian dessert combines caramelized nuts, soft vermicelli, condensed milk, and aromatic cardamom for a luxurious texture and flavor. Whether served warm or chilled, this Eid special seviyan kheer is always the highlight of the festive table.

Instructions

1) Heat the frying pan on a medium-low heat. Add 2 tbs ghee, add sliced almonds and pistachio, fry till light golden brown, remove and set aside.

2) In the same pan add chironji and fry till light golden brown, remove and set aside.

3) Heat the pot on a medium - low heat. Add butter, when it's melted add cinnamon stick, green cardamom and cloves. Let them crackle for a few mins.

4) Add seviyan and fry till golden brown.

PRO TIP: If using per-roasted fry for 30 to 50 sec. If using un-roasted seviyan, fry them till they are golden brown.

5) Lower the heat and add 4 cups of milk. Stir well, cook until the seviyan are soft and cooked.

PRO TIP: Make sure to keep stirring once every few minutes to prevent the milk from getting burnt from the bottom.

6) Add 1/2 cup condensed milk and stir.

7) Add 1/2 cup sugar. Mix and continue to cook for another 3-5 minutes until slightly thick yet runny consistency.

8) Add sliced almonds, pistachios, raisins and dates. Mix well.

9) Turn the stove off.

10) Serve warm or chilled. Sprinkle it with some more nuts before serving.
