Holi Special Malpua Recipe - Soft Indian Pancakes Soaked in Cardamom Saffron Syrup

Ingredients

Batter Mixture: 

  • Maida - 1 cup
  • Milk/Mava Powder - 1/2 cup
  • Suji (semolina/rava) - 2 tbsp
  • Milk - 1 cup
  • Cardamom Powder - 1/4 tsp

Sugar Syrup: 

  • Sugar - 1 cup
  • Water - 1/2 cup
  • Lemon juice - 1 tsp
  • Saffron strings - 1 pinch 

  • Oil/Ghee - for frying
  • Chopped almonds/pistachios for garnish

Holi is all about vibrant colors, laughter, and sweets that bring everyone together. Malpua, the beloved Indian pancake, is a festive favorite that perfectly captures the spirit of celebration.

Made with maida, milk powder, suji, and a hint of cardamom, the batter is rested and then shallow fried until golden and lightly crisp around the edges. Each warm malpua is dipped into fragrant saffron sugar syrup, allowing it to soak up that rich sweetness.

Instructions

1) In a bowl add 1 cup maida, 1/2 cup milk powder, 2 tbs suji, 1/4 tsp cardamom powder.

2) Add 1 cup milk or as required if the batter is still thick.

3) Check for smooth flowing consistency like pancake batter.

4) Rest for 20 min.

5) In the meantime make sugar syrup. In a pot add 1 cup sugar and 1/2 cup water.

6) Mix to dissolve sugar. Let it boil for 10 minutes or till sugar syrup turns slightly sticky.

7) Add 1 pinch of saffron strings.

8) cover and keep it aside.

9) In a frying pan heat oil on a medium low.

10) Pour one ladle of malpua batter over hot oil.

11) Shallow fry in medium hot oil.

12) Flip over and fry both sides till malpua gets cooked completely.

13) drain off excess oil and dip it in the sugar syrup.

14) Soak the malpua on both sides till sugar syrup is absorbed.

15) Garnish with chopped almonds/pistachios.
