Ingredients

  • All-Purpose Flour - 1 cup
  • Milk - 1 cup
  • Eggs - 2 large
  • Sugar - 1 tbsp

  • Melted Butter - 4 to 5 tbsp
  • Salt - pinch / to taste
  • Ripe Mangoes - sliced
  • Whipped Cream - 1 1/2 cup

Instructions

1) In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 cup milk, 2 large eggs, 1-2 tbsp sugar, 1 tsp vanilla extract, 2 tbsp melted butter, and a pinch of salt. Whisk together until smooth.

2) Lightly grease a non-stick pan over medium heat with butter.

3) Pour a small amount (1/4 - 1/2 cup) of batter into the pan, swirling to spread it evenly across the pan. Cook for 1-2 minutes until lightly golden; flip and cook for another 30 seconds.

4) Transfer the cooked crepes to a plate and let them cool slightly.

5) To prepare, place a few mango slices in the center of each crepe, and add a dollop of whipped cream.

PRO TIP: You can dice or slice the mangoes according to your preference!

6) Carefully roll the crepes around the mango slices and whipped cream.

PRO TIP: If you place 2 crepes side by side, it makes it easier to roll it up!

7) Garnish with some fresh cut mango cubes and serve chilled.
