Red Lentil Curry

Ingredients
4 cups cooked red lentils
1 tablespoon vegetable oil
1 large onion, diced
1 teaspoon cumin seeds
2 tablespoons ginger and garlic paste
1 tablespoon curry powder
1 tablespoon cumin powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon salt
1 (14.25 ounce) can tomato puree
1 cup heavy whipping cream
1 cup water
Handful chopped Cilantro
Red lentil curry is a saucy, hearty, and protein-rich meal option perfect for any time of the day. Tomatoes, onions, ginger, and garlic are combined with red lentils and a variety of spices that can be served over rice or eaten with roti.
Instructions
1) Heat vegetable oil in a large skillet. Add cumins seeds and onions and cook until caramelized.
2) Add ginger garlic paste, curry powder, cumin powder, turmeric powder, coriander powder, salt and stir well.
3) Add tomato puree and stir well.
4) Add cooked red lentils and stir well.
5) Add heavy whipping cream and stir well.
6) Add 1 cup of water and let it come to a boil and cook for about 10 minutes.
7) Remove the cover and cook on low heat for 10 mins.
8) Serve red lentil curry with rice and garnish with cilantro before serving.
