Ingredients

  • SWAD Wheat Flour (Chakki Atta) - 2 cups
  • Carrots - 1 medium
  • Bell Pepper - 1 small
  • Cabbage - 2 leaves
  • Tomato - 1 small
  • Onion - 1 small
  • Cilantro - handful
  • Potatoes - 2 medium (boiled)
  • Garlic - 3 cloves
  • Sambhar Masala - 2 Tbsp (any brand)
  • Salt - 1 1/2 tsp
  • SWAD Ghee or Oil- 1/4 cup (for frying)

Sambhar Paratha is a comforting fusion recipe that brings together the flavors of South Indian sambhar and the warmth of North Indian parathas. Made with a mix of fresh vegetables, boiled potatoes, sambar masala, and SWAD Chakki Atta, this paratha is packed with color, aroma, and homestyle goodness. The veggies are finely chopped to release their natural moisture, helping create a soft, pliable dough that cooks beautifully on a hot tawa.

Instructions

1) In a chopper, add 1 medium carrot (cut in pieces), 1 small bell pepper, 2 cabbage leaves, 1 small tomato, and a handful of cilantro. Chop finely.

2) Transfer the chopped vegetables to a large bowl or a flat paraat. Add 1½ teaspoons of salt, mix well, and set aside for 10 minutes.

3) Add 1 small chopped onion, 3 cloves grated garlic, and 2 medium grated boiled potatoes to the mixture.

4) Add 2 tablespoons of sambhar masala to the chopped vegetables. Mix well.

5) Add 2 cups of wheat flour, 1 cup at a time, and knead into a soft dough.

PRO TIP: If the dough is still very sticky, add ½ to 1 cup of wheat flour.

6) Heat a tawa or frying pan over medium-high heat.

7) Divide the dough into 8 equal portions.

8) Place about ½ cup of wheat flour on a plate for dusting. Dip a dough ball into the dry flour and coat it on all sides.

9) Roll out the dough ball into a round paratha using a rolling board and rolling pin.

10) Place the rolled paratha on the hot tawa.

11) Let it cook for 15–30 seconds. Flip the paratha and cook the other side for 30 seconds.

12) Flip again and spread ½ teaspoon of ghee or oil on the surface.

13) Flip and cook for about 1 minute, until you see brown spots.

14) Spread ½ teaspoon of ghee or oil on the other side and flip again to cook for another 1 minute.

15) Flip a few more times to ensure the paratha is cooked evenly on both sides.

16) Remove the paratha from the tawa and serve hot with pickle and plain yogurt.
