- Samak Rice (Barnyard Millet) - 1/4 cup
- Milk - 2 1/2 cups
- Saffron - 10-15 stands
- Sugar - 1/2 cup
- Almonds - 5-7 (crushed)
- Cashews - 5-7 (crushed)
- Cardamom Powder - 1/4 tsp

Instructions
How to Make Samak Rice Kheer:
1) Begin by washing 1/4 cup samak rice (barnyard millet) a few times with cold water. Let soak for at least 30 minutes.
2) After 30 minutes, drain the water from the samak rice and set aside.
3) In a medium heavy bottom pot on medium heat, add 2 1/2 cups of milk.
4) Now add the soaked and drained samak rice as well as the saffron to the milk.
5) Cook this mixture for about 10 minutes or until the barnyard millet is cooked properly.
PRO TIP: Be sure to keep stirring in between so that the bottom does not burn.
6) Once the millet is cooked add 1/2 cup sugar, 5-7 crushed almonds, and 5-7 crushed cashews. Cook for another 5 minutes or until the mixture thickens slightly.
7) Turn the stove off and add cardamom powder.
8) Transfer the kheer to a dish, garnish with some more chopped nuts and serve hot or cold.
