Oil - 2 Tbsp

Tofu (medium firm) - 1 lb (drained & crumbled)

Onions - 1 medium (chopped)

Tomatoes - 1 medium (chopped)

Bell Peppers - 1 cup (chopped)

Green Chilies - 2-3 (chopped)

Cumin Seeds - 1 tsp

Ginger/Garlic Paste - 1 tsp

Cumin Powder - 1 tsp

Garam Masala - 1 tsp

Turmeric Powder - 1 tsp

Red Chili Powder - 1/2 tsp

Lemon Juice - 1 Tbsp

Salt - to taste

Cilantro - 1 Tbsp (garnish)

Green Onions - 2 Tbsp (garnish)

Instructions

1) In a fry pan on medium heat, add 2 Tbsp oil.

2) Once hot, add in 1 tsp cumin seeds and let them splutter.

3) Next, add 2-3 chopped green chilies, 1 tsp ginger garlic paste, and 1 diced onion. Cook until translucent - about 2-3 minutes.

4) Add 1 diced medium tomato and cook for another 2-3 minutes until tomatoes start to soften.

5) Add 1 cup chopped bell peppers, 1 tsp cumin powder, 1 tsp turmeric powder, 1/2 tsp red chili powder, and 1 tsp garam masala.

PRO TIP: Feel free to use any color bell peppers, or a mix of colors like we have!

6) Mix and cook for 1-2 minutes.

7) Add the drained and crumbled tofu to the vegetable mixture, along with salt to taste.

8) Mix everything together and cook for 2-3 minutes until the tofu is heated through.

9) Turn the heat off, add 1 Tbsp lemon juice and garnish with chopped cilantro and green onions.

10) Serve with your favorite bread and enjoy this nutritious and hearty breakfast! Try it out on toast with avocado and chili oil, or even in a breakfast burrito!
