- Potatoes - 3-4 med. boiled & peeled
- Oil - 3 Tbsp
- Cumin Seeds - 1 tsp
- Nigella Seeds - 1 tsp
- Mustard Seeds - 1 tsp
- Turmeric Powder - 1/2 tsp
- Red Chili Flakes - 1 tsp
- Red Chili Powder - 1 tsp
- Coriander Powder - 1/2 tsp
- Salt - 1 tsp / to taste
- Water - 2 cups
- Vegetable Pickle - 1 tsp
Sooji Ka Halwa Ingredients:
- Ghee - 1 cup
- Sooji (Semolina) - 1 cup
- Sugar - 1 cup
- Water - 3 cups
- Milk - 1 cup
- Whole Cloves - 3-4 qty
- Green Cardamom - 3-4 qty
- Cinnamon Stick - 1/2 inch
- Yellow Food Color - optional
- Sliced Almonds - 2 Tbsp
- Sliced Pistachios - 2 Tbsp
- Raisins - 2 Tbsp

Instructions
How to Make Easy Potato Curry:
1) In a wok or large frying pan on medium heat, add 3 tbsp oil, 1 tsp cumin seeds, 1 tsp nigella seeds and 1 tsp mustard seeds. Cook for about 2 minutes until seeds start to sputter.
2) Add 3-4 medium boiled & peeled potatoes and fry for 2 - 3 minutes.
3) Partially smash the potatoes before adding spices.
PRO TIP: Make sure to leave some big potato chunks as well!
4) Add 1/2 tsp turmeric, 1 tsp chili powder, 1 tsp chili flakes, 1/2 tsp coriander powder and 1 tsp salt. Mix well.
5) Add 1 cup water, stir to combine, then cover and cook for 2-3 minutes until the water is absorbed.
6) Add 1 cup of water and bring it to boil.
7) Add 1 tsp of any vegetable pickle you like, cover and cook for 2-3 more minutes.
8) Serve & Enjoy it with Puri!
How to Make Sooji Ka Halwa (Semolina Dessert):
1) In a pan or pot over medium heat, add 1 cup ghee, 3-4 cloves, 3-4 green cardamom pods, 1/2 inch cinnamon stick.
2) Cook the spices for about 1 minute.
3) Add 1 cup SWAD sooji and cook on a low to medium heat until it changes color. It will become light brown in color and give off fragrance.
4) Next, add 3 cups of water, 1 cup milk and a pinch of Yellow Food Color (optional). Mix well to make sure there are no lumps.
5) Finally, add 1 cup of sugar, mix well, and cook on a low heat until the ghee begins to seep out on the edges.
6) Garnish with sliced almonds, pistachios and raisins.
