- Spring Rolls Wrappers - 1 Packet (25 sheets)
- Chicken - 1/2 lb. (minced)
- Cabbage - 3-4 cups (shredded)
- Carrots - 2 medium (grated)
- Spring Onions - 4 stalks (white & green separated)
- Rice Vermicelli Noodles - 2 cups (soaked & drained)
- Oil - 4 Tbsp
- Red Chili Flakes - 2 tsp
- White Pepper Powder - 1 tsp
- Salt - 1 1/2 tsp
- Ginger/Garlic paste - 1 1/2 tsp
- Soy Sauce - 2 Tbsp
- Green Chili Sauce - 1 Tbsp
- Red Chili Sauce - 1 1/2 Tbsp
- Oyster Sauce - 1 tbsp (optional)
- Sesame Seed Oil - 2 tsp
- Oil - 1 cup (for deep frying)
Ingredients to make Slurry:
- All-purpose flour (Media) - 2 tbs
- Water - 4 tbs

Instructions
1) Heat a pan with 2 Tbsp oil. Add minced chicken, ginger-garlic paste, red chili flakes, white pepper, and salt. Mix well and cook until all moisture evaporates. Remove from heat and set aside to cool.
2) In the same pan, heat the remaining 2 Tbsp oil. Add the white parts of the spring onions and sauté until fragrant.
3) Add shredded cabbage and carrots. Sauté for about 10 minutes, or until the cabbage is wilted.
4) Transfer the sautéed vegetables to a large bowl. Add the cooked minced chicken, vermicelli noodles, and the green parts of the spring onions. Mix well.
5) Add soy sauce, red chili sauce, green chili sauce, oyster sauce, and sesame oil. Mix until evenly combined. Taste and adjust seasoning if needed.
6) Remove the spring roll wrappers from the package.
PRO TIP: Keep the wrappers covered with a damp cloth or paper towel to prevent them from drying out.
7) Take out one wrapper at a time, keeping the remaining wrappers covered with the damp cloth.
8) Place the filling on one corner of the wrapper. Fold the bottom over the filling, tuck in the sides, and roll tightly.
9) Apply the slurry to the top edges of the wrapper and seal securely.
10) Heat 1 cup oil in a deep pan or wok. Carefully add the spring rolls and fry until golden brown.
11) Remove the spring rolls from the oil and place them on a paper towel to drain excess oil.
12) Serve hot and enjoy with sweet and sour sauce.
