Vegetarian Dahi Baingan Recipe - Fried Eggplant Layered in Spiced Yogurt Masala with Curry Leaf Tempering

Ingredients
- Eggplant (Baingan) - 2 lbs (sliced)
- Yogurt - 2 cups
- Onion (chopped) - 1 cup
- Tomato Paste - 2 Tbsp
- Ginger/Garlic Paste - 1/2 tsp
- Red Chili Powder - 2 tsp
- Kashmiri Red Chili Powder - 1 tsp
- Coriander Powder - 2 tsp
- Turmeric Powder - 1/2 tsp
- Cumin Powder - 1 tsp
- Garam Masala Powder - 1/2 tsp
- Salt - 1 1/2 tsp
- Water - 1/2 cup
- Oil - 1 1/4 cup (divided into three portions)
- Cumin Seeds - 1 1/4 tsp
- Red Whole Chilies - 4-5 (crushed)
- Curry Leaves - 7-8
Dahi Baingan ka raita is a comforting vegetarian Indian dish that beautifully combines crispy fried eggplant with creamy, spiced yogurt. Slices of eggplant are shallow-fried until golden, then layered with a rich onion-tomato masala infused with cumin, coriander, turmeric, and Kashmiri red chili powder. The yogurt adds a cooling contrast to the warm spices, creating a perfectly balanced flavor in every bite.

Instructions
1) In a pan, heat oil and add sliced eggplant. Shallow fry them until light brown on both sides. Set aside.
2) In a pan, heat oil and add chopped onion. Cook until translucent. Add ginger/garlic paste and cook until the rawness of ginger/garlic is gone, around 2 min.
3) Add tomato paste, 2 tbsp water and mix well.
4) Add red chili powder, Kashmiri chili powder, coriander powder, turmeric powder, cumin powder, garam masala powder & salt, mix everything with 2 tbsp of water. As water evaporates add 2 more tbsp water and cook. Repeat this adding water one more time until oil starts to separate. Set aside.
5) In a bowl add yogurt and whisk until lump free and smooth.
6) In a dish add some masala, top with sliced fried baingan, add some more masala. Spread 2-3 tbsp yogurt. Repeat layers, finish it off so the top layer is the yogurt.
For Tempering:
7) In a deep pan heat oil, add cumin seeds, red whole chilies & curry leaves and sizzle for a minute. Add chopped cilantro and green chilies for garnish.
8) Drizzle the tempering over prepared baingan masala.
9) Serve with white rice or a warm chapati.
