Potato Tiki Ingredients:

  • Potatoes - 4-5 med. (boiled & mashed)
  • Bread Crumbs - 1/2 cup
  • Peas - 1/4 cup (boiled)
  • Green Chilis - 2 minced
  • Ginger Paste - 1 tsp
  • Red Chili Powder - 1/2 tsp
  • Turmeric Powder - 1/4 tsp
  • Garam Masala Powder - 1/4 tsp
  • Chat Masala - 1/2 tsp
  • Salt - to taste
  • Oil - 1/4 cup (for frying)
  • Bread Crumbs - 1 1/2 cup
  • Eggs - 2 (beaten)
  • Black Pepper - 1/4 tsp
  • Salt - 1/4 tsp
  • Slider Buns - 4-5 qty.
  • Green & Red SWAD Chutneys
  • Mayo - 3 Tbsp
  • Onion - 1/2 cup (sliced)
  • Tomatoes - 1/2 cup (sliced)
  • Lettuce - 1/2 cup (shredded)

Macaroni Salad Ingredients:

  • Large Elbow Macaroni - 3 cups
  • Red Onion - 1 cup (finely chopped)
  • Celery - 1/3 cup (finely shopped)
  • Green Bell Pepper - 1/3 cup (finely chopped)
  • Mayonnaise - 1 cup
  • Yellow Mustard - 1 tbsp
  • White Vinegar - 3 tbsp
  • Black Pepper - 1/2 tsp
  • Sugar - 2 tsp
  • Salt - 1 tsp
  • Garlic Powder - 1/2 tsp
  • Onion Powder - 1/2 tsp

Instructions

How to Make Aloo Tiki:

1) In a large mixing bowl, combine 4-5 medium boiled and mashed potatoes, 1/2 cup bread crumbs, 1/4 cup boiled peas, 2 minced green chilies, 1 tsp ginger paste, 1/2 tsp red chili powder, 1/4 tsp turmeric powder, 1/4 tsp garam masala, 1/2 tsp chat masala & salt to taste. Mix all ingredients well to form a dough-like consistency.

PRO TIP: You can make your own chili-ginger paste by grinding green chilis and ginger together to use for other recipes!

2) Divide the mixture into small 1-2 inch sized balls and shape / flatten them into small patties.

3) Crack 2 eggs into a medium bowl, add 1/4 tsp black pepper, 1/4 tsp salt, and beat until smooth.

4) Pour 1 1/2 cup bread crumbs into a plate and spread evenly.

5) Heat 1/4 cup of oil in a frying pan on a medium heat.

6) Dip each potato tiki patty into the egg mixture, then move to the plate and coat it with the bread crumbs.

7) After coating, fry the patties until golden brown on both sides - about 3-5 minutes each side.

8) Place the golden brown aloo tiki patties on a paper towel to drain the excess oil & cool slightly.

How to Make Potato Tiki Sliders:

9) In a small mixing bowl, mix together 3 Tbsp Mayonnaise and SWAD red chutney to taste.

10) Spread a small amount of butter on the inside of the slider buns and place them on the grill or grill pan to toast.

11) Spread the red chutney mayo mix on the bottom half of each bun and SWAD green chutney on the top half of each bun.

12) Place a fried aloo patty on the bottom half of the bun, followed by a slice of tomato, onion and shredded lettuce.

13) Top it off with the bun and enjoy!

How to Make Macaroni Pasta Salad:

14) Cook 3 cups of large macaroni elbows according to the package instructions. Strain and run cold water over the pasta to stop the cooking process.

15) In a mixing bowl, stir together 1 cup mayonnaise, 1 cup finely chopped red onion, 1/3 cup finely chopped celery, 1/3 cup finely chopped bell pepper, 3 Tbsp white vinegar, 1 Tbsp yellow mustard, 1/2 tsp black pepper, 2 tsp sugar, 1/2 tsp garlic powder and 1/2 tsp onion powder. Mix well to incorporate all ingredients.

16) In a large serving bowl, add the cooked macaroni pasta and pour half of the dressing over the top.

17) Mix well to evenly coat the pasta. Cover and refrigerate pasta and the remaining dressing for at least 2 hours.

18) When ready to serve, pour the remaining dressing over the pasta and mix well!
