Butter Chicken Gravy:

  • Chicken - 1 lb (boneless)
  • Oil - 2 Tbsp
  • Onion - 1 medium (sliced)
  • Ginger/Garlic Paste - 1 tsp
  • Patak’s Butter Chicken Spice Paste (from Patel Brothers) - 4 Tbsp
  • Tomato - 1 medium (chopped)
  • Fresh Cream - 1/2 cup
  • Water - 1/4 cup
  • Butter - 2 Tbsp

Pizza Roll:

  • Prepared Pizza Dough - 1 Cylinder
  • Butter Chicken - 1 cup (shredded and separated from sauce)
  • Red Onion - 1/2 medium size (chopped)
  • Bell Pepper - 1 small (chopped)
  • Mozzarella Cheese  - 1/2 cup (shredded)
  • Cilantro - 1 Tbsp (chopped)
  • Egg  - 1 qty (beaten)

Instructions

How to Make Quick Butter Chicken:

1) Wash 1 lb of boneless chicken, cut it into pieces, and then set them aside.

2) In a pot over medium flame, add 2 tbsp of oil.

3) Add 1 medium sliced onion and cook until soft and light brown.

4) Add 1 tsp of ginger-garlic paste and mix well with the onions.

5) Add the chicken and cook until it turns white and the water evaporates from the pot.

6) Add 4 tbsp of Butter Chicken Spice Paste and mix until fully combined. Add ¼ cup of water and mix well to incorporate.

7) Add 1 medium chopped tomato, cover the pot, and cook until the tomatoes become soft. 

Pro Tip: You can also use ½ can of chopped tomatoes if you prefer.

8) Add ½ cup of fresh cream and 2 tbsp of butter. Cover the pot, and cook until the oil rises to the top and the gravy thickens slightly.

How to Prepare Butter Chicken Pizza Pinwheels:

1) Roll out 1 cylinder of prepared pizza dough on a floured flat surface.

2) Spread half of the butter chicken sauce over the pizza dough.

3) Spread ½ cup of shredded mozzarella cheese, 1 cup of shredded butter chicken, ½ medium chopped red onion, 1 small chopped bell pepper, and 1 tbsp of chopped cilantro.

4) Roll it up carefully and seal the edges. 

Pro Tip: Place the roll in the refrigerator for 15 minutes so the dough can be sliced easily!

5) Slice the roll into ½ to ¾-inch slices using a serrated knife.

6) Place the slices flat on a cookie sheet lined with parchment paper.

7) Brush the tops of the pinwheels with an egg or milk wash and sprinkle with some mozzarella cheese.

8) Preheat the oven to 425°F and bake for 15-20 minutes, or until light golden brown.
