Instructions

1) Boil 1 pound of baby potatoes in salted water for 15 minutes, or until fork-tender. Drain and let dry for 5-10 minutes.

2) In a microwave-safe bowl, melt 1/2 cup butter. Stir in 2-3 chopped garlic cloves, 1 Tbsp chopped cilantro, 1 tsp red chili flakes, 1 tsp chaat masala, 1 tsp salt, and 1 tsp black pepper.

3) Place the boiled potatoes on a baking sheet and smash them using a potato masher or the bottom of a glass.

4) Brush the butter mixture generously over each smashed potato.

5) Bake at 400°F for 15-20 minutes, or until golden and crispy.

6) Top with 1/2 cup shredded cheese and bake for an additional 5 minutes, until the cheese melts. Serve with ketchup or chili garlic sauce.
