Samosa Dough Ingredients:
- All-Purpose Flour - 2 cups
- Ghee - 1/4 cup (melted)
- Water - 1/3 cup (as needed)
- Carom Seeds (Ajwain) - 1 tsp
- Salt - 1 tsp
Samosa Filling Ingredients:
- Potatoes - 3-4 medium (boiled)
- Green Peas - 1/2 cup
- Ginger/Garlic Paste - 1 tsp
- Cumin Seeds - 1/2 tsp
- Green Chilies - 1-2 (chopped)
- Red Chili Powder - 1/2 tsp
- Cumin Powder - 1/2 tsp
- Chaat Masala - 1 tsp
- Fennel Powder -1/2 tsp
- Lemon Juice - 2 tsp
- Coriander - 1 Tbsp (chopped)
- Oil - 2 Tbsp + more for frying

Instructions
How to Make Samosa Dough:
1) In a mixing bowl, add 2 cups flour, 1 tsp carom seeds, 1 tsp salt and 1/4 cup melted ghee.
2) Rub the ghee into the flour until you have the consistency of sand. This will take about 2-3 minutes and you want to be sure that the ghee and flour is very well incorporated.
3) Now slowly add in the water to start forming the dough.
4) Add a little water at a time so that it just comes together to form a firm dough.
PRO TIP: Make sure you do not add too much water, you do not want a very soft dough but one that is slightly firmer to the touch. This is what will ensure your samosa is crispy
5) Once the dough is formed, cover with a damp cloth and set aside for at least 15 minutes to rest.
6) In the meantime you can prepare the filling.
How to Make Samosa Filling:
7) In a pan on medium heat, add 2 Tbsp oil.
8) Once the oil has heated add 1/2 tsp cumin seeds and 1-2 chopped green chilies and cook for 1-2 minutes.
9) Next add in 1 tsp ginger/garlic paste, 1/2 tsp red chili powder, 1/2 tsp cumin powder, 1 tsp chaat masala, and 1/2 tsp fennel powder and cook for another minute.
10) Now add in 1/2 cup peas and 3-4 medium boiled & cubed potatoes.
11) Cook everything for a few minutes.
12) Turn the stove off and add 2 tsp lemon juice and 1 Tbsp chopped cilantro.
13) Put to the side and let cool.
How to Shape Samosas:
14) Once the dough is rested, divide it into 5 equal pieces.
15) Roll out each section into a round shape that is medium thickness.
16) Cut the circle in half to form two semi-circles.
17) Place a little bit of water on the two ends of the dough and bring them together to form a cone shape.
18) Pinch the two ends of the dough together to create a seal.
19) Add some of the cooled potato filling into the cone and seal the end of the samosa again with some water.
20) To fry the samosas, heat up oil in a deep pan on medium heat.
21) Once the oil is ready, drop the samosas in and fry about 3-5 minutes until golden brown.
22) Remove from oil and drain onto a paper towel.
23) Serve with green and red chutney and enjoy!
