Dhai Baray

Ingredients
1 1/2 cup Besan (gram flour)
4 1/2 TBSP Maida/Wheat Flour
1/2 TBSP Ajwain/ Carom Seeds
7 TBSP Corn Starch
1/2 TSP Baking Soda
2 TBSP Salt
4 1/2 TBSP Cooking Oil
1/2 glass Water
1 1/2 cup of Milk
1/2 KG Yogurt
2 TBSP Sugar
1 TSP Kewra Essence
Chaat Masala as per taste
Dahi Baray, Dahi Vada, Dahi Bhalla, a popular North Indian food. You would never want to get over this delicious street food topped with curd, masala or chutney.
Instructions
1) In a bowl, add besan/gram flour, maida/wheat flour, ajwain/carom seeds, corn starch, baking soda, salt, cooking oil, water.
2) Mix well.
3) In a pan, add corn starch and milk.
4) Heat up the pan on high flame.
5) Stir well to prevent the bottom from scorching.
6) Turn off the heat once mixture turns into paste.
7) Set it aside.
8) In a separate bowl, add yogurt, sugar, salt, kewra essence.
9) Add the mixture set aside into this bowl.
10) Add milk and mix well.
11) In a pan, add cooking oil.
12) Let it heat on medium flame.
13) Safely place the besan mixture into the pan in the circular shape of Dahi Baray.
14) Fry until they turn brown.
15) Soak in cold water for 10 minutes.
16) Squeeze them to take out excess water.
17) Add the Dahi Baray into the yogurt mixture.
18) Add masala.
19) Ready to serve and enjoy.
