Ingredients

  • Milk - 4 1/4 cups (1 liter)
  • Colored Vermicelli (thin) - 1/2 cup
  • Sugar - 1/2 cup
  • Custard Powder -  1 tbsp
  • Red Jello: 1 small packet
  • Green Jello: 1 small packet
  • Fruit Cocktail - 1/2 cup
  • Almonds/Pistachio - 2 tbsp (chopped)
  • Condensed Milk - 2 tbsp
  • Gulab Jamuns - 6-8 (small)

Doodh Dulari is a rich and festive dessert that brings a burst of color and flavor to any celebration, especially Holi! This creamy milk-based treat combines soft vermicelli, custard, fruity jello cubes, and crunchy nuts, all blended together for a unique and indulgent experience.

Instructions

How to Make Dooh Dulari:

1) Start by preparing your jello in advance. In a small sauce pan, make each batch of jello (red & green) by following the package instructions.

2) After heating the water, remove it from the heat before adding the jello mixture. Mix well until there are no lumps.

3) Transfer the jellos into a dish and let them sit in the refrigerator.

PRO TIP: To avoid making jello twice, try making a larger batch with a lighter color (like yellow), and then separate into two before adding the food color of your choice!

4) In a large sauce pan, add 2 1/4 cups (1 liter) milk and bring it to a boil.

5) Once the milk boils, add 1/2 cup thin colored vermicelli and lower the heat to a simmer.

6) Simmer the mixture for 10-12 minutes, stirring occasionally until vermicelli softens.

7) Add 1/2 cup sugar and 1 Tbsp custard powder. Stir well to incorporate.

8) Cook for another 5 minutes, allowing it to thicken into a pudding-like consistency.

9) Once the milk thickens, remove it from the heat and let it cool slightly.

10) Cut the jello into small cubes and keep it aside.

11) Once the milk has cooled, gently fold in the Jello cubes.

12) Add 1/2 cup of fruit cocktail into the bowl and gently fold to incorporate.

PRO TIP: You can add fresh cut fruit as well!

13) Add 2 Tbsp chopped SWAD Almonds & SWAD Pistachios

14) Finally, add the condensed milk and fold all of the ingredients together until they are spread evenly throughout and add 6-8 mini gulab jamuns to the top.

15) Serve warm or chilled.
