Gajar Ka Halwa

Ingredients
8 medium-sized carrots
4 tablespoons Ghee (clarified butter)
4 cups whole milk
12 tablespoons sugar
⅓ to 1 teaspoon cardamom powder
2 tablespoons golden raisins
10 to 12 almonds – sliced or chopped
10 to 12 cashews – chopped
1 pinch saffron strands – optional

Instructions
1) First grate the carrots, using a handheld grater or a food processor.
2) In a deep bottomed pan, add milk and grated carrots.
3) On a low to medium flame, bring the whole mixture to a boil and then simmer.
4) Keep stirring and cook the mixture until milk starts to reduce and evaporate.
5) When the milk has 75% reduced, add the ghee, sugar, and powdered cardamom to the mixture.
6) Stir well and continue to simmer and cook on a low flame until all the milk evaporates.
7) Towards the end, add the cashews, almonds, saffron, and raisins. Simmer the halwa till all the milk has evaporated.
8) Garnish with some chopped dry fruits while serving.
9) Serve it up!
