Gujiya Holi Recipe - Easy Indian Dessert - Sweet Fried Gujiya with Mawa Filling

Ingredients

Gujiya Dough:

  • All-Purpose Flour - 2 cups
  • Ghee - 4 Tbsp (melted) 
  • Water - about 1/2 cup 

Gujiya Filling:

  • Ghee - 1 Tbsp
  • Golden Raisins - 2 Tbsp
  • Chopped Nuts (Cashews, Pistachios, Almonds) - 5 Tbsp
  • Desiccated Coconut - 1/3 cup 
  • Khoya/Mawa - 1 cup (grated) 
  • Sugar - 1/2 cup 
  • Cardamom Powder - 1 tsp

Instructions

How to Make Gujiya Dough:

1) In a mixing bowl, add 2 cups all purpose flour and 2 Tbsp melted ghee.

2) Combine the flour and ghee with your hands until the flour sticks together when you press in your hands.

3) Next, slowly add the 1/2 cup of water until the dough ball forms. You want this to be a fairly firm dough and not too wet, so add the water slowly.

4) Cover the dough with a damp cloth and let it rest for at least 30 minutes.

How to Make Gujiya Filling:

1) In a large pan add 1 Tbsp ghee, 2 Tbsp golden raisins, and 5 Tbsp mixed chopped nuts. 

2) Toast everything for 2-3 minutes, then remove from heat and set aside in a bowl.

3) Next, toast 1/3 cup desiccated coconut until it turns a light golden brown. Remove from heat and place in the same bowl as the nuts and raisins. 

4) Lastly, roast 1 cup grated khoya until it turns a light golden brown color and starts letting off some of its oil. This will take 3-5 minutes. 

5) Combine the roasted khoya in the same bowl and let everything cool for about 15 minutes. 

6) Add 1/2 cup sugar, 1 tsp cardamom powder and mix everything together well. 

How To Assemble the Gujiya:

1) In order to seal the gujiyas, form a paste with 1 Tbsp water and 1 Tbsp flour. Mix together and set aside. 

2) Once the dough has rested, you can begin to roll it out. 

3) If using a mold, take a 1 inch piece of dough that will roll out to cover the whole mold. Roll out the piece of dough thinly and place inside the mold. 

4) Add about 2 tsp of filling, being sure not to over fill. 

5) Brush the paste we made earlier along the edges to help seal them. 

6) Close the mold and press firmly. Open the mold and make sure the edges are fully sealed.

7) If forming by hand, roll out a 1 inch piece of dough to about 5 inches in diameter.

8) Fill the dough with about 2 tsp of filling and add some paste to the edges for sealing. 

9) Flip over one side of the dough to form a half moon shape and press the edges together firmly. 

10) To add a nice design, you can crimp the edges with your fingers or a fork!

How to Fry the Gujiya:

1) In a deep pan over medium heat, add about 3-4 inches of oil. 

2) Once hot, add the gujiyas (no more than 2 or 3 at a time), being sure not to overcrowd your pan. 

3) Fry for about 2 minutes on each side until golden brown. 

4) Remove and drain off the excess oil.

5) Place in a serving dish and garnish with more chopped nuts and rose petals.
