Ingredients
French Toast
Eggs - 2 qty
Sugar - 1/4 cup
Heavy Cream - 1/4 cup
Milk - 1/3 cup
Salt - pinch
Cardamom Powder - 1/4 tsp
Vanilla Extract - 1 tsp
Thick-cut Bread - 4 slices
Butter - 4 tsp
Pistachio Cream
Ricotta Cheese - 1/2 cup
Heavy Cream - 2 tsp
Pistachios - 2 Tbsp.
Honey - 2 tsp
Garnish
Mango - 1 (sliced)
Pistachios - 2 tsp (crushed)
Rose Petals - garnish
Honey - garnish

Instructions
How to Make the French Toast:
1) In a mixing bowl, combine 2 eggs, 1/4 cup sugar, 1/4 cup heavy cream, 1/3 cup Milk, pinch of salt, 1/4 tsp cardamom powder, and 1 tsp vanilla extract.
2) Whisk everything together thoroughly.
3) Next, take a thick-cut slice of bread and dip into the egg mixture. Be sure to dip both sides so that the bread is evenly coated with the egg.
4) In a frying pan on medium heat, add 1 tsp of butter and then add the dipped piece of bread.
5) Cook on both sides for about 2 minutes each.
6) Once all the slices are cooked, set them aside and work on the pistachio cream.
How to Make the Pistachio Cream:
1) In a blender or food processor, add 2 Tbsp. of pistachio.
2) Give them a quick pulse so that the are slightly crushed.
3) Next, add 1/2 cup ricotta cheese, 2 tsp heavy cream, and 2 tsp honey to the blender and blend until the cream is smooth (about 30 seconds).
4) Set the pistachio cream aside.
5) Slice up your mango into whatever shape you want.
PRO TIP: Don't want to use mango? Feel free to substitute or add any fruits you like - strawberries, raspberries, or peaches would be great too!
French Toast Assembly:
1) Place a slice of french toast on the plate. Add about 2 Tbsp of the pistachio cream on top and garnish with sliced mango, rose petals, crushed pistachios, and a drizzle of honey.
2) Serve with a side of hot coffee for Mom!
