Ingredients
- Thick Poha - 3 cups
- Peanuts - 1 cup
- Cashews - 1/2 cup
- Almonds - 1/2 cup (halved)
- Golden Raisins - 1/2 cup
- Curry Leaves - 10-15 leaves
- Salt - to taste
- Turmeric Powder - 1/2 tsp
- Red Chili Powder - 1 1/2 tsp
- Chaat Masala - 1 tsp
- Sugar - 1/2 cup
- Oil - for frying

Instructions
How to Make Poha Chivda:
1) In a wok or large deep frying pan, heat up 3-4 cups of oil.
2) Begin by frying each of the ingredients individually. Using a sieve submerged in the oil, add the 2 cups of thick poha in batches to the sieve in the oil. Fry until puffed, lift the sieve from oil to drain, and add into a large paper towel lined bowl.
3) Next, add the peanuts to the sieve and fry for about 1-2 minutes or until slightly golden. Add into the large paper towel lined bowl.
4) Follow the same steps to fry the almonds and cashews for 1-2 minutes each. Add each ingredient to the same bowl.
5) Next, fry the golden raisins in the sieve for about a minute or just until they begin to puff slightly.
6) Finally, fry the curry leaves in the sieve for about a minute, and add them to the bowl.
7) Once all your ingredients are ready, remove the paper towels.
8) Add 1/2 tsp turmeric powder, 1 1/2 tsp red chili powder, 1 tsp chaat masala, salt (to taste) and 1/2 cup sugar to the bowl with all of the fried ingredients. Mix all of the ingredients together thoroughly, making sure everything is evenly coated.
9) Your Chivda is now ready! Happy Diwali!
