Pumpkin Lassi

Ingredients

1 Piece Pumpkin Peeled, Seeded, and Chopped into 1” Cubes

¼ Cup Oil

2 Cinnamon Sticks

3 Cardamom Pods

1 Cup Whole Milk

1 Cup Water

1 Cup Plain Yogurt

1 Cup White Sugar

Pinch of Saffron

Try this aromatic blend of pumpkin, cinnamon, and yogurt. Filled with richness of flavors, this drink is irresistible this season.

Instructions

1) Cut Pumpkin and peel, de-seed, and chop into 1” cubes.

2) Add pumpkin with oil and stir well.

3) Let it cook for a few minutes.

4) Add cinnamon sticks and cardamom pods and stir well.

5) Add sugar and milk and let it cook for a few minutes

6) Add Saffron and stir well.

7) Let the mixture come to a boil.

8) Cover the lid and let it cook for about 5 minutes.

9) Remove the lid and stir the mixture well.

10) Lower the heat and cook the mixture for another 10 minutes.

11) Remove the cinnamon sticks and cardamom pods from the mixture.

12) Let the mixture cool for a few minutes and add it to the pitcher.

13) Blend the mixture.

14) In a bowl, add yogurt, water and sugar and whisk well.

15) Add the pumpkin mixture and yogurt to a blender cup and blend well.

16) Pour into a glass and Pumpkin Lassi is now ready to serve.

Alternative way to serve:

17) Add ice cubes to a glass.

18) Pour the pumpkin mixture.

19) Add the yogurt into a glass.

20) Repeat the previous 2 steps the same way until the glass is full.

21) Stir well before serving.

22) Pumpkin Lassi is now ready to serve.
