Instructions
How to Make Dal Halwa Stuffing:
1) In a pot or pressure cooker, add 1 cup of rinsed and washed Chana Dal, 1/4 tsp turmeric powder and 1 Tbsp ghee.
2) Add about 3 cups of water, enough to cover the dal completely.
3) Cook the dal until tender (12-15 minutes at full pressure), then let the pressure release naturally, and allow the dal to cool slightly.
4) Drain the dal of any excess liquid and add it to a food processor along with 3/4 cup jaggery powder.
5) Grind the dal and jaggery into a smooth paste.
6) Remove the mixture from the food processor and add to a pan on medium heat.
7) Cook off any extra liquid and allow the paste to thicken slightly.
8) Remove from heat, and then add 1/4 tsp nutmeg powder and 1/4 tsp cardamom powder.
9) Using 2-3 Tbsp of halwa at a time, form into balls by rolling it between your palms, and set them aside for later.
How to Make Puran Poli Dough:
1) In a large mixing bowl, add 1 cup all-purpose flour, 1 cup wheat flour, 1/4 tsp turmeric powder, 1/4 tsp salt, 2 Tbsp oil and 3/4 - 1 cup of water.
2) Knead the ingredients into a soft, tender dough and set aside for 10-15 minutes to rest.
3) After resting, take 3-4 Tbsp of dough at a time and form it into balls by rolling it between your hands. These should be slightly larger than the balls of halwa.
How to Prepare Puran Poli:
1) Flatten out one of the dough balls with your fingers, and place one of the halva balls on top. Wrap & close the dough around the halwa, making sure it is completely sealed inside.
2) Flatten this out slightly, then dust it with flour on all sides.
3) With a rolling pin on a flat surface, roll the Puran Poli thin, like a roti, and cook on a hot flattop or pan.
4) Add ghee to both sides while cooking, and flip to cook both sides evenly, a few minutes on each side.
5) Remove from heat and serve warm!
