  • Tortillas - 5-7 small
  • Green Onions - 3 qty
  • Cilantro - 1 cup (chopped)
  • Jalapeno  - 1 Tbsp (chopped)
  • Coriander Powder - 1 tsp
  • Red Chili Flakes - 1 tsp
  • Black Pepper Powder - 1/2 tsp
  • Salt - to taste
  • Oil - 3 Tbsp

Inspired by the traditional Afghan Bolani — a flatbread stuffed with spiced potatoes and herbs — this recipe takes a modern twist by smashing the filling onto tortillas and pan-frying them until perfectly golden and crispy.

The result? A crispy, savory, and satisfying taco that’s packed with flavor in every bite. Instructions

How to Make Smashed Bolani Tacos:

1) Start by boiling 5 medium sized potatoes in a pot for about 20 minutes until fork tender. Remove from the water and let cool.

2) Grate / mash the potatoes so they are soft and smooth with no lumps.

3) In a large frying pan over medium heat, add 1 Tbsp of oil. Sauté 3 chopped green onions and 1 Tbsp chopped Jalapeño for 1-2 minutes. Turn off heat and let cool.

4) To you mashed potatoes, add 1 cup chopped cilantro, sautéed green onion mixture, 1 tsp coriander powder, 1 tsp red chili flakes, 1/2 tsp black pepper powder and salt to taste. Mix well to combine all ingredients.

PRO TIP: Add 1 Tbsp of sour cream to make the mixture more creamy!

5) Take 1-2 Tbsp of the potato mixture to form 1-inch sized balls. Place 1 ball of potato mixture on a tortilla and spread evenly on one side.

6) In a frying pan over medium-high heat, add 1 Tbsp oil and heat.

7) Place your potato covered tortillas into the hot pan, mixture side face down. Once they are easy to move around and do not stick (about 3-4 minutes), check for a golden brown sear and flip.

8) Cook for 2 more minutes on the other side. 

9) Bolani Tacos to a serving plate after cooking.

10) Add some sliced onion and green SWAD chutney to your Bolani Tacos. Fill it up with your favorite taco toppings!
