Sooji Mawa Cake Recipe – Soft & Delicious Indian Dessert for Diwali

Ingredients

  • Fine Sooji - 1¼ cups
  • Baking Powder - 1½ tsp
  • Salt - 1/8 tsp
  • Butter - ½ cup (unsalted & softened)
  • Sugar - ¾ cup 
  • Yogurt- 6½ Tbsp
  • Mawa - ¾ cup
  • Cardamom Essence - 1 tsp
  • Milk - ½ cup (room temp)
  • Pistachios - garnish

Instructions

1) Preheat the oven to 330 degrees F. 

2) Grease an 8-inch round springform baking pan and line with parchment paper. Set aside.

3) In a bowl combine sugar and butter using a hand mixer until light and fluffy.

4) Next, add mawa to the creamed sugar-butter mixture.  Beat the mixture until smooth and creamy. 

5) Now, add yogurt to the mawa mixture. Mix until combined. 

6) Add baking powder and mix it well.

PRO TIP: Make sure you are scraping the sides of the bowl regularly to  make sure all the ingredients are getting incorporated properly

7) Now add the fine sooji to this mix and beat until smooth and well blended. 

8) Slowly add milk to the mawa sooji mixture

9) Pour the sooji mawa cake batter in the greased and lined pan.

10) Spread the sooji mawa cake batter evenly into the corners and along the edges of the baking pan.

11) Sprinkle crushed pistachios on top. 

12) Place the pan in the preheated oven and bake for 40-42 minutes or until the toothpick comes out clean.

13) Remove the Sooji mawa cake from the oven and set it over the counter to cool. Allow the cake to cool in the pan for 10-12 minutes.

14) Run a knife around the edges of the cake to loosen the band. Serve hot and enjoy!
