Instructions

1) Chop and prepare all the ingredients in advance. In a large frying pan over medium heat, heat 2 tablespoons of oil. Add 6 cloves of minced garlic and 1/2 inch of minced ginger, and sauté until golden brown.

2) Add 1 cup of diced onions and cook until they turn golden brown, about 5 minutes. Add 1/2 cup each of diced red and green bell peppers and cook for about 5 minutes until the color fades slightly. Next, add 3/4 cup of diced tomatoes and sauté until soft, about 5 minutes.

3) Add 250g (about 1 cup) of diced paneer to the pan and mix well. For extra flavor, fry the paneer in ghee beforehand until a golden crust forms. Add 2 tablespoons of Schezwan sauce, 1 tablespoon of green chili sauce, and 1 tablespoon of dark soy sauce.

4) Stir until everything is well combined. Taste test, and add salt if needed, as the sauces and paneer already contain some salt. Set the mixture aside and let it cool to room temperature.

5) While the filling cools, preheat the oven to 350°F (175°C). Roll out the puff pastry sheets and cut them into equal-sized squares. Place 2 tablespoons of filling in the center of each square.

6) Fold all four corners toward the center to enclose the filling. Arrange the puffs evenly on a parchment-lined baking tray.

7) Bake the puffs at 350°F for 18 to 20 minutes or until golden and flaky. Halfway through baking, brush the puffs with milk or egg wash for a beautiful golden-brown finish. Once baked, remove the tray from the oven and allow the puffs to cool slightly.

Serve warm and enjoy. Happy New Year!
