Ingredients
Strawberry Mousse:
- Fresh Strawberries - 2 cups (chopped)
- Sugar - 2 Tbsp
- Heavy Whipping Cream - 1/4 cup
- Gelatin Powder - 1 tsp
- White Chocolate Chips - 3/4 cup
- Heavy Whipping Cream - 2 cups
- Fresh Strawberries - garnish
Chocolate Ganache:
- Heavy Whipping Cream - 1/2 cup
- Chocolate Chips - 1 cup

Instructions
How to Make Strawberry Mousse:
1) To start, add 2 cups of fresh chopped strawberries to a blender.
2) Add 2 Tbsp of sugar and blend into a smooth puree. Set aside for later.
PRO TIP: Pour the puree to a fine sieve so the puree doesn't have any seeds or lumps!
3) In a small sauce pan, add 1/4 cup of Heavy Whipping Cream and 1 tsp of gelatin powder.
4) Bring this mixture to a simmer - look for small bubbles forming on the side of the pan.
PRO TIP: Don’t let the cream boil.
5) In a small mixing bowl, add 3/4 cup white chocolate chips.
6) Pour the hot cream / gelatin mixture over the white chocolate chips and mix until well combined and smooth. Set aside for later.
7) In a large mixing bowl, whip 2 cups of Heavy Whipping Cream into soft peaks.
PRO TIP: Make sure the whipping cream, bowl and whisk are cold before starting.
8) Add the strawberry puree and white chocolate mixture into the whipping cream and fold / mix well to incorporate. You can also add food coloring at this point if you want to!
9) Spoon off the mousse to individual cups and keep in a refrigerator to set for at least 5 hours.
How to Make Chocolate Ganache:
10) In a small mixing bowl, add 1 cup of chocolate chips.
11) In a sauce pan over low heat, add 1/2 cup Heavy Whipping Cream and bring it to a light simmer.
PRO TIP: Don’t let the cream boil.
12) Pour the hot cream over the chocolate chips, cover and let it rest / melt for 5 minutes. Remove the lid and mix until smooth.
13) Spread the cooled ganache over the strawberry mouse and add fresh cut strawberries to garnish! Be sure to serve chilled.
