Ingredients

Vermicelli Topping:


  • Ghee - 2-3 Tbsp

  • Vermicelli (Sawaiyan) - 2 cups (crushed) 

  • Powdered Sugar -  ½ cup

  • Milk powder - 1/3 cup
  • Pistachios - 2 Tbsp (chopped) 

  • Almonds - 2 Tbsp (chopped) 

Custard:


  • Milk (full-fat) - 2 cups + 1/4 cup reserved

  • Cream - 1 cup 

  • Sugar - 1/2 cup 

  • Corn Starch - 3 Tbsp 

  • Custard Powder (vanilla) - 2 Tbsp 

  • Almonds - garnish (sliced) 

  • Pistachios - garnish (sliced)

Instructions

How To Make Vermicelli Pudding (Nawabi Seviyan):

1. Start by breaking up the vermicelli noodles into small pieces and set aside.

2. In a large pan, add 2-3 Tbsp ghee and 2 cups crushed vermicelli noodles. Toast the vermicelli until they turn a slight golden brown, about 5 minutes. 

3. Next, add the crushed nuts ( 2 Tbsp chopped pistachios & 2 Tbsp chopped almonds), 1/3 cup powdered milk, and 1/2 cup powdered sugar. Mix everything together thoroughly. 

4. In a 9x13 glass baking dish, add half of the vermicelli mixture to the bottom of the dish. 

5. Press the vermicelli into the bottom of the dish in an even layer. 

6. Next, make the custard mixture by adding 2 cups milk, 1/2 cup sugar, and 1 cup cream to a pot and bringing it to a simmer.

7. In a separate bowl, add the remaining 1/4 cup milk, 3 Tbsp cornstarch, and 2 Tbsp custard powder. Mix well until everything is dissolved. 

8. Add the milk and starch mixture to the simmering milk and whisk continuously until it starts to thicken.

9. Once thickened, pour the mixture on top of the vermicelli layer, making sure to even out the custard layer as well.

10. With the remaining vermicelli mixture, spread it evenly on top of the custard. 

11. Decorate with slivered pistachios & almonds. 

12. Refrigerate for at least 4 hours (or overnight) and enjoy chilled.
