Ingredients

Laccha Paratha Ingredients:

  • Frozen Flaky Paratha - 6 (uncooked)
  • Ghee - 1/4 cup
  • All-Purpose Flour - 2 Tbsp
  • Oil & Ghee - for frying

Vegetable Burger Patty Ingredients:

  • Potato - 2 cups (boiled & mashed)
  • Paneer - 1/2 cup (grated)
  • Carrots - 1/4 cup (grated)
  • Bell Pepper (Capsicum) - 2 Tbsp (finely chopped)
  • Onions - 2 Tbsp (finely chopped)
  • Green Chilies - 1-2 qty (finely chopped)
  • Cilantro - 1 Tbsp (chopped)
  • Ginger/Garlic Paste - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Chaat Masala - 1/2 tsp
  • Red Chili Powder - 1 tsp
  • Red Chili Flakes - 1/2 tsp
  • Salt - 1 tsp
  • Rice Flour - 1/4 cup
  • Cheese - 6 slices
  • Oil or Ghee - for frying

Burger Topping Ingredients:

  • Lettuce - 5-6 leaves
  • Onion - 1/2 cup (sliced)
  • Tomato - 6 slices

Burger Sauce Ingredients:

  • Mayonnaise - 1/3 cup
  • Chili Garlic Sauce - 1 Tbsp
  • Mustard - 1 tsp
  • Pickles - 1 tsp (finely chopped)
  • Red Chili Powder - pinch
  • Black Pepper Powder -1/4 tsp

Instructions

How to Make the Veggie Smash Patty:

1) In a bowl, mix 2 cups mashed potatoes, 1/2 cup grated paneer, 1/4 cup grated carrots, 2 tbsp finely chopped bell peppers, 2 tbsp finely chopped onions, 1-2 chopped green chilies, 1 tsp ginger-garlic paste, 1/2 tsp cumin powder, 1/2 tsp chaat masala, 1 tsp red chili powder, 1/2 tsp red chili flakes, 1/4 cup rice flour and 1 tsp salt.

2) Mix everything until well incorporated.

3) Heat a skillet or griddle over medium high heat.

4) Add some oil or ghee

5) Form a medium sized ball with the potato mixture.

6) Place the ball on the skillet and using a burger smasher or spatula smash the patty down and flatten.

PRO TIP: Place a piece of parchment or wax paper over the burger before smashing it to keep it from sticking to your smasher or spatula.

7) Cook until golden brown and crispy on both sides (about 3–4 minutes per side).

8) Place a slice of cheese on each patty and cover until the cheese is melted.

9) Remove from heat and set aside.

How to Make Laccha Paratha

10) Begin by defrosting uncooked frozen flaky parathas.

PRO TIP: Leave them on the clear sheet that they come on for easy rolling.

11) In a small bowl combine 1/4 cup melted ghee and 2 tbsp of all-purpose flour to make a paste and set aside.

12) Take one of the defrosted parathas and spread some of the ghee & flour paste to evenly coat the paratha.

13) Using a knife, make a single straight cut from the center of the circle to the edge.

14) Starting from one side of the cut, begin rolling the dough into a cone shape, spiraling around the center.

15) You’ll end up with a cone or a swirl-like roll, almost like a snail shell.

16) Stand the cone upright (narrow end up), gently press it down with your palm to flatten into a disc.

17) Lightly flatten out the disc so that it is not too thick or thin. It should be about 5 inches in diameter.

18) Heat a skillet or tawa over low heat and add a little oil and ghee.

19) Place the flattened paratha on the pan and cover while cooking on low heat. About 3-4 minutes per side until golden and flaky.

How to Make Burger Sauce:

20) in a small bowl combine 1/3 cup mayonnaise, 1 Tbsp chili garlic sauce, 1 tsp mustard, 1 tsp finely chopped pickles, pinch of red chili powder, and a pinch of black pepper powder.

21) Mix well and set aside.

How to Assemble Smash Burger:

22) Spread burger sauce on one side of each cooked paratha.

23) Place 2 crispy veggie patties on top of one paratha.

24) Top with a little more burger sauce, lettuce, tomato slices, and onion slices.

25) Top with the second paratha.

26) Enjoy!
